Sambal Goreng Kering (Spicy Fried Potato Strings)

Sambal goreng Kering, or spicy potato strings

Indonesians love their sambal, snack foods, and they love their spices. When I try to explain this snack to my friends, I just refer to them as spicy indonesian style potato chips. I eat them the way I would do chips, and they go great with a beer. I wish bars would carry this stuff instead of peanuts or popcorn. Indonesians also serve this as a small side dish to go with a rice dish. This simplified version is easy for anyone to make. Sambal Badjak is tricky to find, so you may have to go to your local asian market for this garlic chili paste.

Pik Nik Original Shoe String Potatoes, Sambal Badjak, Garlic Powder, and Paprika.

  • Paprika, garlic powder, and salt to taste
 Directions:
  1. Heat up a large pan, skillet, or walk at medium heat.
  2. Toss in the Sambal Badjak chili garlic paste and stir around until lightly bubbling. Use more or less to taste, depending on your heat tolerance.
  3. Stir in the potato string chips and mix well until coated with the sambal badjak.
  4. Sprinkle in paprika and garlic powder to taste. Add more sambal badjak if you want more spice and toss a little more to coat.
  5. Turn off heat, let cool to room temperature, and put it back in the potato chip container. You now have Sambal Goreng! There’s no need to refrigerate after preparing.
