There was a time I used to have a strong dislike of cauliflower. But that was before I learned how amazing it tasted when you roast it and season it with different sauces and flavors! I’ve grown to love cauliflower, and it all started with this hearty dish. This roasted cauliflower dish is certain to convert most cauliflower haters into cauliflower lovers.
Ingredients:
- 1 head of cauliflower, cut into florets
- Olive oil to coat
- 1 tbsp butter or olive oil
- 2 thinly sliced garlic cloves
- 1 tsp capers with some of the juice in the jar
- Salt Pepper
- Additional spices to flavor, such as paprika, or curry powder, etc (optional)
Directions:
- Preheat oven to 450 degrees.
- Place florets in roasting pan. Drizzle with olive oil, add salt and pepper, and any optional seasoning.
- Toss to coat florets completely with oil.
- Roast in oven for 20 to 25 minutes.
Butter and Caper Sauce:
- Melt tbsp of butter in large sauce pan for 1 to 2 minutes until fully melted.
- Add garlic, capers, and caper juice to add flavor.
- When cauliflower is done, toss in skillet with sauce.
- Serve and pour extra sauce on top.
